A Self-taught Baker is Opening a New Bakery in Saugatuck

A new bakery called Erica June Baking Co. is on its way to Saugatuck. The business is anticipated to open this April or May at 435 Water St, taking over the vacant space that was formerly Crane’s Wine and Cider.

Owner and head baker Erica White worked as a hairstylist and a flight attendant, but her true passion lies in baking. A self-taught baker, White established her small business in 2023 and started by operating from her home. She offers catering services for weddings, private and public events, and online ordering via her Facebook.

White has been looking for an appropriate space to open shop over the past year, and when the Crane’s space became available, she decided to give it a go with the help of her husband, who has also been a business owner.

“One of the biggest challenges in opening my first brick-and-mortar bakery was just actually making the decision to do so, taking the leap of faith and moving forward with opening a store. Luckily, I have a husband who is already a businessman, so I have his wisdom behind me and guidance in opening my first store for me, the biggest challenge is just finding the right time management and having time for everything I wanna create for my store.” White told What Now Detroit via email.

Erica June Baking Co. is a true family legacy for White. The name June pays tribute to White’s inspiration: her grandmother. Meanwhile, White’s daughter already inquired about working at the business.

Anticipated this spring, Erica June Baking Co will serve all of White’s beloved iconic items, including donuts, bagels, cupcakes, a variety of cakes, cookies, and cinnamon rolls. The bakery will also have basic coffee offerings. Until the space is ready for the public, White will continue to bake her heavenly treats out of a commercial kitchen in Fennville.

“My must-try flavors are chocolate peanut butter, another one is a banana cupcake with a cream cheese frosting with drizzled caramel, which is so decadent. It’s a fan favorite. Carrot cupcake is amazing. My coconut dream cupcake is so good and I have an apple spice cupcake that is like no other!” White listed a few must-try flavors for her future customers.
