After months of discussions and brainstorming, Adobe In & Out, a family-owned restaurant that has served Grand Rapids over the past 50 years, is now Adobe Mexican Kitchen. Third-generation owner Spencer Boorsma also announced plans to build a new restaurant in Walker at 3970 Lake Michigan Dr. NW.
“At Adobe Mexican Kitchen, quick service is just as important as quality food,” Boorsma said in a press release. “Nothing comes through the door processed – everything is made fresh daily, from our signature hot sauces to our mouthwatering chips. We are pleased to unveil our new brand along with plans to continue building our team and growing our footprint to meet customer needs.”
Construction hs begun at the new Walker site. Boorsma recently demolished the former Rosedale Floral Building to make way for the new Adobe. The 2,200-square-foot facility will include a drive-thru, a takeout order counter, and seasonal outdoor seating, according to the press release.
The restaurant also plans to relocate its current Fulton Street location to 527 Bridge St. NW., the former El Sombrero site. The relocated location is less than a mile away from Adobe’s current address. Once relocated, the restaurant will feature indoor dining, a drive-thru, and a late-night walk-up window. The restaurant also has another location at 4410 Chicago Dr. SW.
“My grandfather and father believed owning a business is the best vehicle to help people, and that’s a value I continue to carry on,” he stated. “Some of our team members have been with us since the first restaurant opened over 50 years ago, and that’s the achievement I’m most proud of. I look forward to leading Adobe’s new chapter and welcoming new customers and team members through our doors.”
