Co-owned by industry veterans Robert Esshaki and Chris Thomas, Rudy’s Prime Steakhouse was designed by Birmingham-based Saroki Architecture and brought to life by Kelly Building & Development Company. Spanning 4,500 square feet and accommodating up to 132 guests, the restaurant is focused on delivering a warm and exceptional dining experience rooted in hospitality.
“This new chapter represents a revitalization of this historic space, infusing it with fresh, innovative energy while honoring the rich legacy of Rudy’s Market,” said co-owner Robert Esshaki in a statement. “We’ve assembled a passionate, dynamic team united by a commitment to excellence and a shared mission of consistently exceeding guest expectations. By nurturing our deep-rooted community connections, we’re creating a truly unique destination in downtown Clarkston—one that we hope will continue to be a beloved cornerstone of the area for many years to come.”
Leading the team is general manager Jean-Baptiste Caillet, who’s resume includes managing New York City restaurants such as Balthazar and Harry’s.
“With 25 years of experience working in New York, I’ve learned that the key to creating an exceptional dining experience is not just about the food, but about the connection we make with our guests,” said Caillet. “At Rudy’s Prime, we’re focused on delivering elite hospitality and outstanding food, all while preserving the essence of what made Rudy’s Market so special to the Clarkston community. The intimate design of our space allows our team to truly engage with each of our guests and ensure they feel valued
and cared for.”
Caillet is joined by executive chef Josh Stockton, a metro Detroit native with a rich culinary background that includes opening Gold Cash Gold in Detroit’s Corktown neighborhood and stints at Daniel Boulud Brasserie in Las Vegas and Blackberry Farm in Tennessee, with his most recent role being Director of Culinary Operations at Birmingham’s Daxton Hotel.
“Rudy’s Prime isn’t your typical steakhouse; it’s a very chef-driven experience. We plan to incorporate seasonal ingredients wherever possible and bring more creativity and fun into every dish,” said Stockton. “What really excites me is bringing that extra level of detail to the table. It’s going to be a game changer,
especially for the Clarkston area—where people will really appreciate the care and thought we’re putting into every plate.”
Rudy’s Prime Steakhouse features a curated menu of Prime and Wagyu steaks, fresh seafood, crafted cocktails and house-made desserts. From Prime filets and a dry-aged Prime Porterhouse from Allen Brothers to Piedmontese Tomahawks from Fairway Packing Co. in Detroit’s Eastern Market, the menu reflects a commitment to quality and craftsmanship.
