Grand Rapids’ only fully vegan and gluten-free bakery, Rise Authentic Baking Co., has something new in the oven. Owners Becca and Nick Van Liere have signed the lease for a ground floor space inside the Lofts on Grove at 1359 Plainfield Ave. NE to open a plant-based and gluten-free brunch concept called FIKA. “FIKA” is the Swedish tradition of having a coffee break. Referring to the tradition, the new eatery and cafe will serve breakfast and lunch items, including pancakes, fresh salads, and sandwiches. The eatery will also feature a small market serving coffee, tea and espresso beverages as well as deli items and packaged grab-and-go snacks.
“We’re thrilled to be a part of the Creston neighborhood’s growth and can’t wait to serve the community with a welcoming space for plant-based dining,” Nick Van Liere told MLive. “We have seen the success of our sister company, Rise Authentic Baking Company, and the demand for a full food menu, so we know Grand Rapids is ready for a plant-based and gluten-free restaurant option. We are so excited to make it happen at The Lofts on Grove.”
FIKA is anticipated to open in Spring 2025.
